Sencha Teas are made from the first leaves to be picked each Spring after the nutrients stored in the tea bush through winter have been released into the leaves. Chinese Sencha tea is pan-roasted to stop the oxidation process unlike the steaming process used in Japan. This gives the Chinese teas a sweeter taste and less grassy flavour with none of the hints of seaweed sometimes noted in Japanese Sencha tea. Steeping Sencha tea produces a green infusion with a fresh vegetal aroma.
